This afternoon when I get home from my doctor's appointment, I shall be baking dessert for Christmas Eve at my parents'.

They've already demanded that I bake the apple pie with pecan topping I made for Thanksgiving (which apparently disappeared from how scrumptious it was). Any suggestions on the second dessert?

For a while there I was baking Paula Deen's yummy crunch top apple pie for every occasion, but I feel I should switch it up. I was even considering being extra adventurous and making cheesecake!!

You've got several hours to give me some ideas, so please share recipes!

Chocolate Sheet Cake

For the cake:
2 C granulated sugar
2 C flour
4 T cocoa
2 sticks butter
1 C water
2 eggs
1 t baking soda
1/2 C buttermilk
1 t vanilla

For the frosting:
1 stick margarine
6 T milk
1 C marshmallows
2 T cocoa
1 t vanilla
1 16-ounce box confectioner's sugar

Grease and flour a 13 x 11 (13 x 9 works too) pan.

Preheat oven to 350.

Mix sugar, flour, and cocoa in a mixing bowl.

In a saucepan, melt butter in the water; when boiling, pour over dry ingredients and beat well.

Add egss. Beat well.

Dissolve baking soda in buttermilk and add to batter. Beat well.

Add vanilla. Beat to incorporate.

Pour into pan and bake about 30 minutes, or until done.

IMPORTANT: Leave cake in pan and frost while hot. To make the frosting:

Put margarine, milk, marshmallows, and oocoa in a heavy saucepan. Stir over low heat until marshmallows melt. Add vanilla. Blend in confectioner's sugar, beating until smooth. Spread warm frosting on hot cake.

After all that, you'll want to cover with foil and chill it for at least a couple of hours, and overnight is better. The frosting "sets up" upon cooling and forms a light layer of fudge over the top of the cake. The cake, meanwhile, stays rich and moist by virtue of being sealed in by the pan and the fudge frosting. I freely admit this winds up looking more like a pan of brownies, but it isn't.

mmmmm yum! Chocolate cake! Marshmallows! So far this has moved to the top of my list.

I'm planning to make Turkish Delight tomorrow, because I'm a masochist. I've printed out several good-looking recipes and will have to experiment with the best one. I'll let you know how it goes1
